For years I have made rhubarb sauce,freezing for use year round. I ate it plain as one would eat apple sauce. One day,it came to me to try it with yogurt. As soon as I tried it,I knew it was a special combination. So every year,I would scrounge off my friends and neighbors who had rhubarb plants,asking for contributions to my rhubarb habit. I had read about Nelson Farms and how they could turn your food ideas into a commercial product. Our Farms has done well promoting ourself and our ideas over the years with many fall activities. I believed in the product and in our ability to market the product. So I purchased 250 rhubarb root stocks and planted them the length of a field in the spring of 2010. This year the plants overwintered and came back with a vengeance. Next year they will be mature enough to harvest them completely. So we had enough rhubarb to make 3 batched of rhubarb sauce. Next year,we may plant more and we should have enough material to make more than double the product.
We believe in this product. There are a lot of rhubarb lovers who cannot buy a ready to eat rhubarb product. Many others have not really tried rhubarb. So we believe there are a lot of folks who will enjoy consuming our rhubarb sauce. Enjoy it!
